Fried Blueberries Pie

Fried blueberries pie


Ingredients for pie crust
  • Butter 4 ounces
  • Caster sugar 2 ounces
  • Flour 8 ounces
  • Vanilla essence ½ tsp
  • Baking powder ¼ tsp
  • Egg yolk 1
  • Chilled water to knead
Ingredients for filling
  • Blueberry pie filling as required
Method for pie crust
  • Beat butter, caster sugar, vanilla essence till fluffy, add egg yolk continue to beat, fold sieved flour and baking powder, mix well to form into a dough using chilled water as required, roll dough on a floured surface, cut into rounds with 3 inch cutter, roll round slightly, moisten edges with water, spoon 1 tbsp blueberry mixture on half of each round, fold un-topped half of round over filling, press edges with fork to seal, freeze for 30 minutes, deep fry until light golden, remove sprinkle with icing sugar and serve.
