Fried Blueberries Pie
Fried blueberries pie

Ingredients for pie crust
- Butter 4 ounces
- Caster sugar 2 ounces
- Flour 8 ounces
- Vanilla essence ½ tsp
- Baking powder ¼ tsp
- Egg yolk 1
- Chilled water to knead
Ingredients for filling
- Blueberry pie filling as required
Method for pie crust
- Beat butter, caster sugar, vanilla essence till fluffy, add egg yolk continue to beat, fold sieved flour and baking powder, mix well to form into a dough using chilled water as required, roll dough on a floured surface, cut into rounds with 3 inch cutter, roll round slightly, moisten edges with water, spoon 1 tbsp blueberry mixture on half of each round, fold un-topped half of round over filling, press edges with fork to seal, freeze for 30 minutes, deep fry until light golden, remove sprinkle with icing sugar and serve.
