Carrot and Tomato Soup Credit Crunch Munch

This is one of my favourite soups, its really easy to make and very economical. You can use up all the dodgy carrots at the bottom of your fridge drawer and with a couple of cheap cans of tomatoes, an onion some stock and a little milk, you can have enough soup for 8 people.

Carrot and Tomato Soup (serves 8)

1 tbsp sunflower oil (2p)
1 large onion, peeled and roughly chopped (19p)
Approx 600g carrots, peeled and roughly chopped (40p)
2 cans plum tomatoes chopped or unchopped doesnt matter (31p)
1 litre vegetable stock (2p)
salt and freshly ground pepper
200ml milk optional (15p)

1. Heat the oil in a large pan (I make this in my pressure cooker but its not essential) add the onion and the carrots and stir them around for a few minutes.
2. Add the two tins of tomatoes and the stock.
3. Season with a tsp salt and a few grinds of pepper, you can adjust later if required.
4. Cook until the carrots are soft, 10 minutes in the pressure cooker, about 20 minutes without.
5. Puree the soup either with a stick blender straight into the pot or using a blender or food processor.
6. Add the milk if using, but the soup is also very good without it.

Fried fish with tomato sauce

Fried fish with tomato sauce


Ingredients
  • Egg 2
  • Bread crumbs 1/2cup
  • Fish fillet 300g
  • Lemon juice 1tbsp
  • Butter 1tbsp
  • Oil 1tbsp
  • Black pepper powder 1/2tsp
  • Crushed black pepper 1/2tsp
  • Flour 4tbsp
  • Salt as required
  • For the sauce
  • Finely chopped onion 1
  • Boiled and chopped tomato 2
  • Finely chopped garlic 2 cloves
  • Finely chopped parsley 1/4bunch
  • Crushed red chili 1tsp
  • Basil 1tsp
  • Tomato paste 2tbsp
  • Oil 2tbsp
Method:-
  • Heat 2tbsps oil in a pan and fry the chopped onions and garlic cloves until they change color and the onions become tender.Add 2 boiled and chopped tomatoes, salt as required,1/2tsp black pepper powder, a few chopped leaves of parsley 1tsp basil and 1tsp crushed red chilies.
  • Add ½ cup water and allow to cook for 3-4 minutes or until the sauce thickens.In the mean time dice the fish fillet and marinate with salt, pepper and lemon juice.Dredge the fish cube sin flour, dip in the 2 beaten eggs and finally coat in breadcrumbs.
  • Melt 1tbsp butter in a pan and heat 1tbsp oil. Fry the fish cubes from both the sides until they turn golden brown in color.Pour the prepared tomato sauce on a platter and top with the fried fish cubes. Garnish with chopped parsley and lemon wedges.

Beef Short Ribs Braised with Wild Mushrooms and Tomato – I Sure Hope Youre Having Bad Weather

This video recipe for beef short ribs braised with porcini mushrooms and tomato is so comforting, so satisfying, and so deeply warming that when I make it, Im actually disappointed if its not storming outside.

I mean, why waste a dish like this on a nice day? I havent quite mastered controlling the weather yet (although, from what I hear, many of my old habits have raised the globes temperature a little), but this time of year you can usually count on Mother Nature blessing you with some cold, wet weather in which to enjoy these ribs.

The short ribs are slowly braised with easy-to-find dried porcini mushrooms (for real, ask someone at the fancy grocery store and theyll find them for you!) until they turn into a triumph of fork-tender goodness.

I love these short ribs over mashed potatoes, but the rich tomato and mushroom gravy is fantastic over soft polenta as well. I really hope you give this cool weather wonder a try. Enjoy!



Ingredients:
1/2 cup dried porcini mushroom
1/2 cup water
2 1/2 to 3 pounds beef short ribs (about 8-10 pieces)
salt and freshly ground black pepper to taste
2 tbsp vegetable oil
1 onion, sliced
2 cloves garlic, minced
2 cups beef broth

1/2 tsp salt
pinch of cayenne

Tomato Soup Home made soup with fresh tomatoes



Ingredients


Fresh Tomatoes big chopped-4( 250gms)

Onion medium chopped-1( 30 gms)
Carrots small chopped-1( 50gms)
Garlic cloves chopped-4
Water- 2 1/2 cups( 500 ml)
Bay leaf -1
Butter-1tbsp
Pepper and Salt to taste
Cream or White sauce-2tbsp (optional)
Tomato red food colour-pinch (optional)


For garnish-
Bread croutons (bread chopped to cubes and fried in oil/ butter)
Spring onion greens or coriander leaves- 1 tbsp




Method
In a pressure pan add tomatoes, onions, carrots, garlic, bay leaf and water. Pressure cook tomatoes along with other ingredients for 10 mins. Once cooked, remove the bay leaf from the cooked tomato mixture. Allow the tomato mixture to cool down and make puree in the blender. Heat butter in a deep pan, add the blended tomato puree to the pan, season tomato soup with salt and pepper and boil soup for 2 mins. If required add cream or white sauce to make Cream of Tomato soup. Garnish with bread croutons and greens of spring onions. Serve Hot.


How to make White sauce 


Ingredients
Butter- 15 gms
All purpose flour or Maida- 1 tbsp
Milk- 1/4 cup


Method
In a sauce pan melt 15 gms of butter on low heat, add flour to the melted butter and keep stirring the flour for 5 mins on low heat until flour is cooked in butter. Slowly add milk to the cooking flour, keep stirring the milk and cook until smooth( without any lumps) and thick White Sauce is obtained.

Thakkali Soup Tomato clear Soup

                                                  
                                                         we are almost on the look out for some good soup recipes, since soup is an indispensable item in all households .This is a simple soup which can be given even to small babies This soup can be had with rice also if made little hot and spicy.For bachelors this is a good recipe as it is simple and can serve dual purpose.This soup will go well along with papad for rice.

Ingredients
Tomatoes-2 (big)
Big onion-1
green chili-2
Broken green gram (pasi paruppu)-2 table spoons
Thoor dhal(thuvaram paruppu)-2 table spoons
Turmeric powder-1 teaspoon
Pepper powder-1 teaspoon
To season
Pepper-1 teaspoon
clove-2
fennel seeds-1teaspoon(big jeera)
cinamon-2 small pieces
bay leaf-1 small piece
Curry leaf-little
Coriander leaves for garnishing


                    Cut the tomatoes into fine pieces. Mince the onions too.Slit the chilies.In a small pressure cooker add little cooking oil and season the soup with the items given for seasoning.Now add the dhals and saute for 30 seconds so that its raw smell goes(if you roast for long then the dhals will get roasted and will not get cooked.so be careful) now add the tomatoes and onion pieces along with the green chili.Add turmeric powder and the salt needed.Pour 2 to 3 cups of water.Close the cooker and cook for 7 minutes or for 2 whistles.Once the pressure goes open the cooker and pour the contents into a stainless steel strainer or any good strainer.Squeeze off the contents nicely with a laddle.Now add as much water or Arisi mandi(rice washed water) to get the desired consistency.Check for the hot and salt taste.If you are going to have it as soup for drinking then the salt and hot taste can be less.Keep the cooker again in the stove.Now add the pepper powder and without closing the cooker bring the soup to a boil or cook for 5 more minutes in medium flame.Garnish with finely chopped coriander leaves while serving.

Tomato dal tomato pappu

Ingredients:
Toor dal(kandi pappu)--1 cup
Chopped onions-----1/4cup
Tamatos chopped----2
Green chilles---------2
chopped ciliantro---2t.s
Gingergarlic paste--1/2ts
Cumin seeds--------Few
Mustard seeds------Few
garlic-------------1 clove
Chana dal-----------1/4ts
black gram----------1/4ts
Turmeric------------Pinch
Salt-----------------To taste
Chilli powder------1/2t.s
Red chilli---------1

Procedure:
1. Take 1cup of toor dal in a pressure cooker, wash it and add 2 cups of water.
2. Add chopped onions, chopped tomatos, green chillies, turmeric and ginger garlic paste.
3. mix all the ingredients nicely and close the cooker with its lid and place the weight valve on it.
4. Turn on the stove and cook the mixture for 3 whistles.
5. turn off the stove and wait untill all the gas escapes from the cooker.
6. take off the weight valve and open the cooker.
7. mash the mixture.
8. add salt and chili powder and mix again.
9. Now we will prepare tadaka/ talimpu.
10. heat oil in a pan and add redchilli, onions and cook them for 1min. and now add cumin seeds
    mustard seeds, mashed garlic chana dal and black gram and sautee them nicley untill onion turn brown.
11. Now add this tadka to cooked dal and mix it.
12. finally garnish with ciliantro. serve with rice or chapati along with Mango pickle. tates delicious.

The CLT Sandwich Cheese Lettuce Tomato

Cheese Lettuce and Tomato Sandwich
Recipe? You dont need no stinkin recipe. Two slices good whole wheat sandwich bread, smeared with mayo. Slices of ripe, juicy fresh-off-the-vine tomato sprinkled with a little salt and pepper. Crisp lettuce. All topped with a slice of Guernsey Girl cheese fried in a lightly-oiled pan over medium heat until brown and bubbly on both sides. Oh man, I want another and my cheese is all gone. *sniff* These things were exquisite; no other word.

Guernsey Girl is one of the cheeses we picked up at Upper Canada Cheese when we were there. Its a halloumi-inspired cheese, meaning it holds together and gets brown, buttery and delicately squeaky when fried in a pan as above instead of becoming a molten mess. If you cant get Guernsey Girl, you could use halloumi cheese. Ill be scouting around to see what I can get here, for as long as the tomatoes hold out.

Tomato Bajji

Tomato bajji are famous at my husbands place and he remembers them a lot ,as he used to have them quite often when he was young. I gave  them a  try and they came out so delicious and yummy. I cannot bring back his Golden days (bcoz he is married to me LOL!!)…atleast I managed to bring the flavor of tomoto bhajji.

These are prepared with ripe round tomatoes dipped in besan batter and layered with onions, coriander leaves and roasted peanuts. 



Ingredients:

Red Round Tomatoes – 3 Medium
Besan – 1 cup
Baking Soda – ½ tsp
Salt As Required

Onion – 1
Coriander leaves – ½ cup
Chaat Masala – 1 tsp

Sev (optional) – 3 tsps
Lemon juice – 2tsps
Roasted Peanuts – 3 tsps
Red Chilli Powder – 1 tsp

Oil for Deep Frying



Preparation

  • Wash the ripe round tomatoes and dry them.
  • In a mixing bowl, add besan, baking soda, red chilli powder and salt.
  • Add enough water to make thick batter.
  • Heat oil on medium heat for deep frying.
  • When oil gets hot, dip the tomatoes into batter and coat with thick besan batter.
  • Slowly drop the coated tomato into the hot oil.
  • Deep fry the tomato until it turns light golden color all over it.

  • Remove bajji’s from heat.
  • After it gets cooled cut the tomato bajji into halve.
  • Take a wide serving plate
  • Place the half bajji’s, layer each with chopped onions, chopped coriander leaves, salt, chilli powder, chaat powder, lemon juice.
  • Lastly add sev and roasted peanuts.
  • Serve immediately.

Afghani Kabab in Tomato Gravy


Ingredients
  • Mince 1 kg
  • Tomato 1 kg
  • Onion finely chopped 2 medium
  • Green chilies chopped 10
  • Oil or ghee 1 cup
  • Crushed black pepper ½ tbsp
  • Tomato ketchup 2 tbsp
  • Salt to taste
Method
  • Soak 1 kg tomatoes in hot water for 2 to 3 minutes. Remove skin and blend well.Chop 1 kg mince in chopper with salt to taste. Add in 2 chopped onion, 1 cup ghee, ½ tbsp crushed black pepper and 5 chopped green chilies. Mix well and make in to four big kabab.Fry well in greased pan, now cut into pieces and keep aside.Heat 1 cup oil in pan, add tomato paste, 5 chopped green chilies, salt to taste and black pepper powder. Add in kabab slices. Lastly add 2 tbsp ketchup. Simmer on low flame till done.Serve hot.

Miso Tomato Soup

There are still a very few tomatoes around, and they are best for cooking at this point. Mind you, this works perfectly well with tinned tomatoes too. Very quick, easy and low calorie; we just wont talk about the salt content. Also good with a few greens thrown in if you have them: a couple of baby bok choy, or a handful of chopped cabbage for that matter.

Mr. Ferdzy came up with this soup a few years ago, although given the simplicity of the ingredients he was treading on a pretty well known path. I made it this week as it was good for stretching out a meal of mixed sauté of leftovers. We were cleaning out the fridge, as we will be away for about a week visiting relatives... see you next week.

4 to 6 servings
20 minutes prep time

Miso and Tomato Soup
2 medium shallots
1 clove of garlic
1 teaspoon mild vegetable oil
3 large tomatoes (4 cups chopped)
2 cups water
1/4 cup light (shiro) miso

Put a large pot of water on to boil.

Peel and chop the shallots. Peel and mince the garlic. Heat the oil in a small skillet, and cook the shallots until lightly browned. Add the garlic and cook for a minute longer, stirring constantly. Remove from the heat and let cool.

When the water boils, blanch the tomatoes for 1 minutes. Cool them under cold water, and peel them. Chop them finely.

Put the tomatoes into a pot with 1 1/2 cups of water. Bring to a boil, and simmer for 5 to 10 minutes. Meanwhile, mix the miso in the remaining 1/2 cup water until smooth.

Add the shallots and garlic to the tomatoes. Add the miso, and bring back up to a simmer. Serve at once.

Tomato and bread soup


Ingredients
  • Bread slices 2-3
  • Finely chopped onions 1
  • Chicken cube 1
  • Finely chopped tomatoes 4
  • Chicken stock 3 glasses
  • Minced garlic 2-3 cloves
  • Dry basil leaves 1tsp
  • Finely chopped parsley 1tbsp
  • Crushed red chili 1/2tsp
  • Black pepper powder 1/2tsp
  • Olive oil 4tbsps
  • Salt as required
Method
  • Heat 4tbsp of olive oil in wok .Cut the breads slices into small squares and fry till they turn crisp and golden brown in color.Remove with a slotted spoon and place the bread on an absorbent paper.In the same oil fry 2-3 cloves of garlic, 1chopped onion. Fry until the onions soften and turn pink in color.
  • Add 4 chopped tomatoes, 1tsp dried basil leaves, salt as required and ½ tsp black pepper powder. Cook for 1-2 minutes.Add 3 glasses of chickens tock and 1 chicken cube. Cook the mixture on a high flame.
  • When the stock begins to boil add the fried bread slices and 1tbsp finely chopped parsley. Cook until the bread slices become soft.The delicious tomato and breads soup is ready to serve.
