INGREDIENTS

***Rice Pudding:
2 cups cooked rice
3 eggs, beaten
½ cup granulated sugar
1 teaspoon ground cinnamon
Pinch of freshly grated nutmeg
1 teaspoon vanilla extract
Pinch of fine-grain kosher salt
1 (13.5 oz. can) coconut milk
½ cup whole milk
½ cup raisins

***Raspberry Cinnamon Puree:
2 tablespoons granulated sugar
1 teaspoon cornstarch
2 tablespoons water
1 tablespoon lemon juice
½ teaspoon vanilla extract
½ teaspoon ground cinnamon
1 cup frozen raspberries

METHOD

Preheat oven to 350 degrees. Prepare a 9x9x2 casserole dish by spraying it with baking spray.

In a medium bowl, whisk the eggs, sugar, vanilla, cinnamon, nutmeg, and kosher salt. Gradually add the coconut milk, and whole milk; whisking to combine. Fold in the rice and raisins; mixing to combine. Pour into a prepared 9x9x2 square casserole dish. Place casserole inside of a larger baking pan. Pour hot tap water 1-1/4” deep around casserole into larger pan (for even cooking of rice pudding). Bake for 1 hour. Remove casserole from water and place on cooling rack, letting it stand for 10 minutes to set before serving.

Meanwhile, whisk together all the puree ingredients, except the raspberries, in small saucepan over medium heat until sugar and cornstarch are dissolved. Add the raspberries and constantly stir with wooden spoon until mixture boils, and then reduce heat to simmer for 5 minutes, while occasionally stirring. Carefully pour the hot mixture into a blender and remove center of lid. Place a clean kitchen towel over the hole of the lid, and puree until smooth, and then strain through a sieve using a spoon to push the puree through to remove most of the seeds. (Please use a cheesecloth to strain the puree instead if you want to remove all of the seeds.)

To serve, spoon the raspberry sauce onto serving plate, and dampen an ice cream scoop with tap water (to prevent sticking) to scoop a mound of rice pudding on top of puree (see above photograph). – Enjoy!

Nigellas Sticky Chocolate Pudding

We only eat puddings at the weekend and I try to make something on Saturday that will do for Sunday as well.  I wasnt sure what I was going to make but it had to be something messy and sticky (more of this later in the week) so sugar was going to feature and I had a big bar of dark chocolate and a new tub of Green and Blacks Cocoa powder.  Some rootling around in the recipe books and I found Nigella Lawsons  Sticky Chocolate Pudding from How to Eat.

You make up the pudding mixture and put it in the dish, then cover it with dark brown sugar and cocoa and then pour boiling water over the whole thing!

What happens is that the sponge rises to the top and you have a lovely chocolate sauce in the bottom of the dish.

Lovely, rich, sticky and gooey pud.

On Saturday I served it with soured cream.  I then divided the remaining pudding into ramekins and on Sunday reheated it in the microwave and served with ice-cream.

I would thoroughly recommend this pud.  You get between 6-9 servings, depending on how greedy you are!

Im entering this for the February Forever Nigella challenge #12 at Maison Cupcake

Hot Cross Bun and Butter Pudding

Hot Cross Buns are everywhere in the shops just now, even though it is nearly a month until Easter.  This is an easy warming dessert made with these spiced and fruited bread buns and if you have children or teenagers to feed, it fills them up!  It also features one of the Total 0% Yogurt Split Pots, this time its the one with the honey.

Hot Cross Bun & Butter Pudding
This pudding serves 3-4 people

1 Hot Cross Bun
10g butter
2 eggs
100ml milk
1 tbsp soft brown sugar
1 Total 0% Greek Yogurt Split Pot (Honey)

Grease a small deep heatproof dish with a little of the butter.  Split the bun and spread each half with the remaining butter.  Slice the bun into small squares and place in the dish. Drizzle over the honey.

Beat the eggs, sugar, milk and yogurt together and pour over the pieces of bun.

Leave for an hour to soak, then pre-heat the oven to 170C and bake in the oven for about 30 minutes until risen and golden.
I served this with icecream, but you could eat it as it is, with custard, cream or more yogurt.
