Fruit gateau


Ingredients
  • Sponge cake of 4 cakes
  • Ingredients for icing
  • Fresh cream whipped 1 pound
  • Icing sugar 2 ounces
  • Mix fruit cocktail 1 tin
  • Strawberry jelly 1 packet
Method
  • Make a 4 egg sponge like above cool cake, cut cake horizontally into 3 layers, to each layer brush generously with tinned fruit syrup, then fresh cream, then fruit, second layer of cake, again moist with sugar syrup, then raspberry jelly, fresh cream, fruit, finally the top layer of cake is also soaked with sugar syrup, covered with fresh cream, thick layer and decorate with chocolate decorations.

Mix Fruit Kheer



Ingredients

  • Mix fruit cocktail 1 tin
  • Milk ½ liter
  • Rice powder 3 tbsp
  • Green cardamoms 4
  • Kewra 2 tbsp
  • Sugar ½ cup
  • Khoya 250 gm
  • Almond pistachio 25 gm
Method
  • Finely chop 1 tin fruit cocktail.Heat ½ liter milk in a pan till it comes to a boil.Add 3 tbsp rice powder and mix well.Also add ½ sugar and cook till sugar is dissolved.
  • Add chopped fruits and cook on low flame till thickens.Also add 2 tbsp kewra and 250 gm khoya, cook for 2 – 3 minutes.Dish it out, garnish with chopped almond and pistachios.

Ávaxtagrautur Icelandic style compote of dried fruit

This is one of my fathers favourite dishes. He likes it best with heaps of sugar and cream.
It can be served hot or cold, as a meal in itself or as a dessert.

150 g. mixed dried fruit – the usual Icelandic combination is prunes, apples, apricots, pears and peaches. Or you can use one type of dried fruit.
100 g. sugar
900 ml. water
30 g. potato flour (or cornstarch) mixed with 100 ml. cold water

Cook the fruit in the water until soft. Press through a sieve or process in a blender if you desire a finer texture. Add sugar and thicken with potato flour mix. Serve hot or cold, with cream or half & half.
