Afghani Biryani

Afghani Biryani


Ingredients
  • Rice 300 gm
  • Mutton ½ kg
  • Onion 1
  • Green cardamom 5 – 6
  • Green chilies 3 – 4
  • Eggs 4
  • Cloves ½ tsp
  • Whole red chilies 5
  • Cashew nuts 25 gm
  • Cinnamon 2 sticks
  • Ginger garlic paste 1 tbsp
  • Ghee ¼ cup
  • Saffron 1 small pack
  • All spice powder 2 tsp
  • Coriander leaves ¼ bunch
  • Mint leaves ¼ bunch
  • Salt to taste
  • Kewra 2 tbsp
  • Yellow color as required
Method
  • Grind together 5 whole red chilies, 25 gm walnut and a little water.Marinate ½ kg mutton with a little salt and a little ginger garlic paste. Heat ¼ cup ghee in a wok, add 1 chopped onion and fry till golden brown. Remove a little brown onion and keep aside.
  • Now add cashew nut paste in pan, also add meat and 1 tsp all spice. Fry well till its color is changed.Then add 1 – 1 ½ cup water, 3 – 4 green cardamoms, ½ tsp cloves and 2 cinnamon sticks. Cover and cook on low flame.
  • Separately boil 300 gm rice with salt, water and 3 – 4 green chilies till half done.Drain out extra water and keep the boiled rice aside.When the meat is done, spread top with coriander leaves, mint leaves and boiled egg slices.
  • Now spread boiled rice on top. Sprinkle with yellow color, 2 tbsp kewra and saffron.Simmer for 10 – 12 minutes, dish it out and serve hot.

Bombay biryani

Bombay biryani


Ingredients
  • Rice ½ kg
  • Oil ¾ cup
  • Brown onion 1 cup
  • Mutton 750 gm
  • Yogurt 1 cup
  • Ginger garlic 2 tbsp
  • Coriander powder 2 tsp
  • Chili powder 3 tsp
  • Turmeric ½ tsp
  • Allspice 1 tsp heaped
  • Salt 1 ½ tsp
  • Green cardamom grinded ½ tsp
  • Potatoes 4 cut and fried till golden
  • Tomatoes 4 sliced
  • Green chilies whole 8
  • Dried plums 10
  • Coriander leaves ½ cup chopped
  • Mint 20 leaves
Method
  • Boil rice with salt until ¾ done. Heat oil add half brown onion, mutton, ginger garlic paste, fry for 10 minutes add yogurt with all dry spices, cover and cook for 15 minutes add 1 ½ cup water, again cover and cook till mutton done, add in it boiled potatoes, sliced tomatoes, green chilies, dried plums, again cover and cook for 10 to 15 minutes, lastly add coriander, mint, remaining brown onion, top with boiled rice, add yellow color, mixed with Kewra and ½ cup milk, leave it on dum until done.

Kofta biryani

Kofta biryani
 

Ingredients
  • Rice 750 gm boiled with 2 tbsp salt
  • Black cumin ½ tsp
  • Bay leaf 1
  • Whole spices 1 tbsp mixed
Ingredients for kofta
  • Mince ½ kg
  • Allspice 1 tsp
  • Poppy seeds grinded 1 ½ tsp
  • Salt 1 tsp
  • Ginger garlic paste 1 ½ tsp
  • Malai 1 tbsp
  • Desiccated coconut grinded 1 tsp
  • Chili powder 1 tsp
  • Roasted gram 1 tbsp grinded
  • Onion raw grinded 1
  • Bread 1 sliced soaked in ¼ cup milk
  • Coriander leaves 2 tbsp
  • Green chilies 2 chopped
Ingredients for masala
  • Oil ¾ cup
  • Green chilies whole 6
  • Tomatoes blended 2
  • Cumin 1 tsp
  • Ginger garlic paste 1 ½ tsp
  • Allspice ½ tsp
  • Chili powder 2 tsp
  • Salt 1 tsp heaped
  • Coriander powder 2 tsp
  • Onion brown ½ cup
  • Yogurt mixture
  • Yogurt whipped 1 ½ cup
  • Yellow color pinch
  • Kewra water 1 tbsp
  • Green cardamom grinded ¼ tsp
  • Nutmeg grinded ¼ tsp
  • Mace grinded ¼ tsp
  • Coriander and mint leaves chopped 2 tbsp
  • Dried plums 8
Method for kofta
  1. In a chopped add mince with Poppy seeds grinded 1 ½ tsp, Salt 1 tsp, Ginger garlic paste 1 ½ tsp, Malai 1 tbsp, Desiccated coconut grinded 1 tsp, Chili powder 1 tsp, Roasted gram 1 tbsp grinded, Onion raw grinded 1, Bread 1 sliced soaked in ¼ cup milk, Coriander leaves 2 tbsp, Green chilies 2 chopped, grind well, add ¼ cup water, make in shape of kofta, and keep aside.
Method for masala
  1. Heat oil add Green chilies whole 6, Tomatoes blended 2, Cumin 1 tsp, Ginger garlic paste 1 ½ tsp, Allspice ½ tsp, Chili powder 2 tsp, Salt 1 tsp heaped, Coriander powder 2 tsp, Onion brown ½ cup, fry well adding little water, add koftas, cook on slow flame till koftas done and thick gravy left. Boil rice with salt, black cumin, whole spices till half done.
To assemble biryani
  1. In a pan put half quantity of boiled rice, put kofta with gravy, top with yogurt mixture, chopped coriander and mint leaves, dried plums, remaining boiled rice, top with ¼ cup ghee or oil and leave it on dum for 15 minutes.

Madrasi Biryani

Madrasi Biryani


Ingredients
  • Rice 300 gm
  • Chicken ½ kg
  • Yogurt 250 gm
  • Onion 2
  • Tomatoes 3
  • Green chilies 4 – 5
  • Coriander leaves ¼ bunch
  • Ghee ¼ cup
  • Oil ½ cup
  • Yellow color few drops
  • Saffron 1 small packet
  • Dry plum 100 gm
  • Mustard seeds 1 tsp
  • All spice powder 1 tsp
  • Chili powder 1 tbsp
  • Cumin seeds 1 tbsp
  • Kewra 2 tbsp
  • Ginger garlic paste 2 tbsp
  • Salt to taste
Method
  • Heat ½ cup oil in a pan, add 2 chopped onion and sauté till golden brown.Add 2 tbsp ginger garlic paste, 3 chopped tomatoes, 1 tbsp cumin seeds, 1 tsp mustard seeds, salt to taste, 4 – 5 green chilies, 1 tbsp chili powder, 1 tsp all spice powder, 250 gm yogurt, ½ kg chicken and 1 cup water. Cook for 10 – 12 minutes and turn the flame off.
  • Boil 300 gm rice till a little tender, remove a little rice and add to the chicken mixture.Also add 100 gm plum and ¼ bunch of chopped coriander leaves.Boil the remaining rice till 3/4th done, add the boiled rice to chicken mixture.
  • Spread 2 tbsp kewra and few drops of yellow color on top rice.Also sprinkle 1 small packet of saffron, spread ¼ cup melted ghee on top.Simmer for 10 – 12 minutes. Serve with raita and salad.

Whole Masoor puy lentils Biryani


Ingredients:
1/4 cup Milk with Saffron,
2  cups Basmati Rice,
1/2  cup Whole Masoor, (puy lentils)
1 Potato,  (cut in sliced)
1/2 cup  Capsicum,(sliced)
2 tomato,(cut in sliced)
3 to 4 Onion sliced, (crisp fried)
1 Onion finally chopped,
1/2 cup Coriander chopped,
1/2 cup Mint(pudina) chopped,(optional) 
3 tbsp Vegetable Oil,
1 cup Yogurt, (beaten)
10-20 Raisin,
10 cashew nut, (fried)
3 tsp Biryani masala,
1/4 tsp Turmeric powder,
2 tsp. Red Chili powder,
1 Onion finally chopped,
1 tbsp Garlic chopped,
2-3 pieces cinnamon,
4 Cardamom,
2 Bay leaves,
1 tsp Cumin seeds,
3 tsp Ginger-Garlic paste,
1 tbsp Whipping cream,
Salt to taste,


Method:
* Soak Masoor for 2-3 hours.
* Add enough water & cook till masoor is soft, not too much cook.
* Drain the masoor, keep aside.
* Heat oil (2 tbsp) in a pan. Add  finely chopped onion, fry till golden brown.
* Add ginger garlic paste. Fry for a minute.
* Add masoor followed by turmeric, red chili Powder, biryani masala, and salt to taste. Fry for two minutes.
* Add yogurt (thick),raisins,whipping cream, mint, and cook till mixture becomes semi dry. keep aside.
* Now heat 1 tbsp of oil and fry cumin seeds, cloves, cinnamon, tejpatta.
* Add rice and fry a little, add enough water (double that of rice) and salt, cook till rice is done.
* Remove the rice and spread on plate.
* Peel the potato and cut to potato ,tomato and capsicum in long stick size.
* Deep fry potato chips lite golden brown.
* Capsicum also fry for 1 minute.
* Mix together chopped coriander and fried onion. Set aside.
* Take microwave safe large bowl and spread a layer of rice, capsicum, fry potato, fry onion.
* Cover with masoor mixture and alternate rice, capsicum, potato, onion and massor a couple of times.
* Top with saffron milk and ghee.
* Cover lid tightly and place  medium heat in microwave for about 5 t0 7 minutes.
* Garnish with cashew nut, coriander, fried onion, tomato.
* Serve with Onion garlic raita and papadum.

# Tips some time i not used microwave, i take large bowl and  mixed rice, masoor mixture, vegetables mix together and cover and left for 5 min its gives nice aroma.
